Tuesdays at the Table ~ Italian Parmesan Potatoes

This recipe is a great alternative to a plain ole' baked potato. 

The recipe can be varied for however many potatoes you need to make.   made three but the recipe is for 2.


Italian Parmesan Potatoes
adapted from All Is Amazing


2 medium potatoes
1/8 cup butter
grated Parmesan Cheese
Italian Seasoning
Pepper
Salt
Garlic Powder

Heat oven to 400 degrees.

Scrub the potatoes and remove any eyes.  Cut in half long-wise.


Melt butter and pout into an 8X8 pan and spread evenly across the bottom.  Sprinkle Parmesan Cheese, Italian Seasoning, pepper, salt and garlic powder all over the butter.


Place ptoatoes face down on the butter and seasonings.


Bake for 40-45 minutes or until a fork goes through the potato gently.  These smell delicious while baking!


Cool for 5 minutes before removing from the pan.


You can add any toppings to these per taste.  Sour cream, cheese, etc.
