Full Plate Thursday ~ Corn Dog Muffins

If you have kids, you know that hot dogs are a frequent staple.  A few weeks ago I shared the recipe for "Weiner Winks".  Here is another way to mix it up with hot dogs.  I usually get the 98% fat free dogs.  A bit more healthy.  I'm sneaky like that :)


Corn Dog Muffins

1/2 cup melted butter
1/2 cup sugar
2 eggs
1 cup milk
1/2 tsp baking soda
1 cup cornmeal
1 cup all purpose flour
1/2 tsp salt
8-10 hot dogs cut into 1" pieces

Preheat your oven to 375 and spray muffin tins with cooking spray.  You could also use cupcake liners.

Whisk together butter, sugar, eggs and milk.

Add baking soda, cornmeal, flour and salt.  Whisk ingredients well.



Add hot dogs and mix through.


Spoon mixture into muffin tins.


Bake for approx. 20 minutes or until golden brown.


Cool for 5 minutes in the pan then remove them to a wire rack.
