Cream Puff Cake Recipe

I thought I'd post a recipe for my husband's favorite dessert. (I got the recipe from his mother. Is there a connection there?) This is a very light, cool dessert that goes very well with a heavy meal when you don't want a really rich dessert. Let me know if you try it and how you like it.


Cream Puff Cake

1 c. water
½ c. butter
1/4 tsp salt
1 c. all purpose flour
4 eggs
1pkg (8oz) cream cheese, softened
2 pkgs (3.4 oz ea.) Instant vanilla pudding mix
3 c. cold milk
1 (12 oz) whipped cream (cool whip)
chocolate syrup

In a sauce pan, over medium heat, bring water, butter and salt to a boil. Add flour all at once, stir until a smooth ball forms. Remove from heat; let stand for 5 min. Add eggs, one at a time, beating well with a spoon after each addition. Beat until smooth. Spread into a greased 13X9 cake pan. Bake at 400F for 30-35 minutes or until puffed and brown. Cool.

In a mixing bowl, beat pudding mix and milk then add cream cheese and beat until smooth. Spread over puff cake. Refrigerate for 20 minutes. Spread with whipped topping; refrigerate.

Drizzle with chocolate syrup before serving. (Optional)
