Cookie # 5 in:
Wholesome Peanut Butter Cookies
1/2 cup packed brown sugar
1 cup sugar
2 cups quick-cooking oats
1 cup plus 2 Tablespoons flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1/2 cup crunchy or creamy peanut butter
1/4 cup (1 1/2 sticks) butter, softened
1 1/2 cups chocolate chips, optional
Preheat oven to 375.
Combine all dry ingredients in a large bowl.
Add softened butter and eggs, peanut butter and chocolate chips (because c'mon, who wouldn't?). Beat until thoroughly mixed.
Drop by teaspoonfuls onto ungreased cookie sheet and bake for 10-12 minutes until lightly browned around the edges.
Remove from oven and let cookies cool on cookie sheet for 1 minute. Transfer to cooling rack. (Makes 4 to 4 1/2 dozen.)

These were my favorite so far. They had my favorite combination: Peanut butter, oatmeal and chocolate. Can't go wrong there!
