Chocolate Peanut Butter Ritz Cookies

These are a favorite at our house and they are so simple to make even if they are a bit messy.  Especially when the kids want to "help".

I don't really know  a technical name form them so I'm calling them:

 Chocolate Peanut Butter Ritz Cookies

Box of Ritz Cracker (I used the Great Value Snack Crackers)
Jar of Creamy Peanut Butter
Bag of Semi-Sweet Chocolate Chips (or whatever kind you like the best)
Sprinkles, colored sugar, etc. (optional)
Wax paper

Spread some peanut butter on a cracker.

Top it with another cracker.

Melt your chocolate.  I melted mine in the microwave and then switched it to my small crock pot to keep it nice and smoothly melted.

Then drop your cracker sandwich in the chocolate and use a spoon or fork or both to roll it around in the chocolate until well coated.

Use the spoon to smooth the top out and remove some of the excess chocolate off the bottom.  Place on wax paper until the chocolate hardens.  Sprinkle with decoratives before the chocolate hardens.

And that is my very technical recipe for Chocolate Peanut Butter Ritz Cookies.

I usually get chocolate all over myself and the kitchen, but that is half the fun.

Give them a try.  You'll like them!

Peanutty Cookie Bars

Cookie # 9 in:

I decided to make these cookies into bars and took them to dinner at my brother's house.  The original name was Peanutty Clusters.

I mixed the dough up and put it in the pan but waited until we got to my brother's to stick it in the oven.  I wanted to share the fresh out of the oven sensation.  I brought Cake Batter ice-cream along, too!

I didn't have my camera to take a picture but think Ruby Tuesday's Blondie without the chocolate chips (which might make it into this recipe next time.)

Peanutty Cookie Bars

1/2 cup packed brown sugar
1/2 cup sugar
3/4 cup party peanuts
1 1/2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup butterscotch-flavored baking chips
1/2 cup butter, softened
1/2 cup creamy peanut butter
1 egg
Several Tablespoons sugar

Preheat oven to 375.

Combine all dry ingredients in a large bowl.

Add softened butter, peanut butter, and egg.  Thoroughly mix.

Spread in a 8X8 cake pan and sprinkly with sugar.

Bake approximately 30 minutes.  (I didn't time this one, so be careful and keep an eye on it).  Be careful not to overbake.

Remove from oven and serve warm with ice-cream.

Results

Warm peanut buttery, butterscotchy goodness along-side smooth, melty ice-cream...

This was so yummy!!  I mean, I cannot express how good this was.  Delicious!!  It was as good as Ruby Tuesday's Blondie if not better.  Yum!  Yum! Yum!!!

This is a must try!  Can you tell I liked it?

Let me know if you try these out and if you think they were as great as I did.

Lightly Spiced Raisin Cookies--Yuck!!!!

Cookie # 8 in:

Lightly Spiced Raisin Cookies

I'm not even going to post pictures or the recipe!  See Results...

Yuck!  Yuck!  Yuck!!  This recipe must have either had a misprint or someone has no taste buds.  When putting the ingredients in the bowl, I tought"  Wow!  3 teaspoons of baking soda!?!  Ok."

They smelled really good.  My mom and I sat down with some tea and a cookie fresh from the oven.  Anticipation!  I don't like raisins so I picked them out.  The cookie itself looked promising.

One bite.  That was all it took.  It tasted like straight baking soda!  They were completely inedible.

How disappointing!  Oh, well, better to find out now than 2 days before Christmas.
DON"T try these!

Up until I made these cookies I would have said, "Dates.  Ewww!"  I had never tried them because I didn't THINK I liked them.  They looked too much like raisens.  For the sake of this project, though, I thought I'd try out these cookies.  They smelled wonderful!  And guess what?  They tasted WONDERFUL!  Yummy!  What have I been missing all these years?

Let me know if you try these out.

These cookies were a favorite of my 9 year-old.  She took them in her lunch to school and shared with her friends.  I loved the roasted almond smell filling the house.  I'll probably make these again.
Let me know if you try them!

I wasn't sure if I'd like these because of the Cranberries.  I was pleasantly surprised.  They were pretty good.  Kaylee liked them until I told her the chunks were cranberries, then she suddenly didn't like them!

Sadly, the dogs liked them a little too well.  I had them in a ziplock on the counter.  I came home to an empty ziplock on the floor with a hole chewed in the side.

Let me know if you try them!

Spicy Oatmeal-Raisin Cookies are the first cookie ever made during "Colletta's Christmas Cookie Try-outs".  Click on the button above to see more about the Try-outs.

Before I get into the recipe, I must tell you about a kitchen gadget that I will be using for basically every cookie recipe I make.  It is the Pampered Chef Scoop

I don't like raisins so I have to admit that I didn't actually eat one of these cookies.  However, oatmeal-raisin is my mom's favorite cookie so she was my taste-tester.

They passed with flying colors!

Let me know if you try this recipe and if you like it.

Colletta's Christmas Cookie Try-outs

I've been inspired by the Houseworks Holiday Plan , my good friend Rhonda and Cris at Goodeness Gracious to embarq on what I'm calling:

The purpose of this endeavor is two-fold.

1.  To try-out some new cookie recipes (along with some familiar ones)

2.  To have 22 Homemade Christmas Gifts ready to be given to family and friends by the end of the Try-outs.

The concept is to try-out each of the 22 recipes found in the book "Gifts for the Cookie Jar" by Lia Roessner Wilson.

I will make one batch of cookies from start to finish to try-out the recipe and the finished product.  I'll make an additional "Cookie Jar" gift using the instructions provided and prettying up a Mason Jar.

I've already checked and these gifts will keep until well after Christmas, so no worries there!  Whoo!

Here are the Cookies:

1.  Spicy Oatmeal-Raisen Cookies
2.  Chuncky Chocolate Cookies
3.  Hearty Trail Mix Cookies
4.  Festive Cranberry-Orange Cookies
5.  Wholesome Peanut Butter Cookies
6.  Orange-Sugar Cookies
7.  Mocha-Chocolate Chip Cookies
8.  Rich Date and Walnut Cookies
9.  Lightly Spiced Raisen Cookies
10.  Peanutty Clusters
11.  Banana Nut Cookies
12.  Buttermilk-Raisin Cookies
13.  Holiday Honey-Spice Cookies
14.  Colorful Candy Cookies
15.  Malted Milk Crunchies
16.  Butterscotch Snaps
17.  Choco-Cranberry Nuggets
18.  White Chocolate-Macadamia Nut Rounds
19.  Walnut-Cinnamon Balls
20.  Deluxe Oatmeal Cookies
21.  Molassess Cookies
22.  Butter Pecan Delights

The goal is to get through all 22 recipes before Christmas.  That means I'll be making 1-2 different cookies per week.

By the end of this project, I'll probably be so sick of cookies.  Wait.  Is that possible?

We'll see.
