White Chocolate Peppermint Popcorn, take 2

Here's another great Christmas-time recipe from my archives.  So, so good!!!

White Chocolate Peppermint Popcorn

-1 bag White Candy Melts (you can also use 16 oz white chocolate morsels or almond bark.
-12 Candy Canes finely crushed (or about 40 mints)
-2 packs of microwave popcorn, popped

Pop your popcorn in the microwave.

While the popcorn in popping, use a food processor to crush your candy canes into a fairly fine powder.

After the popcorn is done popping and is awaiting in a large mixing bowl, use the microwave to melt the Candy Melts.  Turn the microwave on for 1 minute.  Stir.  Microwave for 1 minute and then stir until smooth.

Add the crushed candy cane to the white chocolate and mix well.

Pour the white chocolate/pepermint mixture over the popcorn.  Gently stir to coat the popcorn.

Pour out onto wax paper.  Spread it out a bit and allow the coating to harden.

After the coating has hardened, you can put it in a container of choice.

The Results:

Yummy!  It is a combination of butter, salt, white chocolate and peppermint.  Very good but very sweet also.


Let me know if you give it a try.  It is a great way to use up some leftover candy canes. 

I never did try a chocolate/peanut/popcorn combo, but it still sounds like a good idea!
