Tempt My Tummy Tuesdays ~ Cinnamon Chip Coffee Cake

Tempt my Tummy Tuesdays
 
I've been wanting to try this recipe for a couple weeks now.  My regular grocery store (Wal-Mart) didn't have Cinnamon Chips, so I had to stop in another super-market to find them.  It was well worth the extra stop!
 

I originally found this recipe over at The Stay At Home Moms of Etsy.


Cinnamon Chip Coffee Cake:

1 cup (2 sticks) butter, softened
1 cup sugar
2 eggs
1/2 teaspoon vanilla extract
3/4 cups applesauce
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 (10 oz) package Hershey's Cinnamon Chips
1 cup chopped pecans (optional)
Easy Glaze (recipe follows) or powdered sugar

Heat oven to 350 and grease 13X9X2 inch baking pan.

Beat butter and sugar in a large bowl until well blended.

Beat in eggs and vanilla and applesauce.

Add flour, baking soda and salt to mixture and blend well.

Stir in Cinnamon Chips and pecans.

Spread in prepared pan.


While it is baking, you can clean up your mess :)



Bake 30 to 35 minutes or until a toothpick inserted in the center comes out clean.


Drizzle with glaze or sprinkle with powdered sugar.  I chose the glaze.


Easy Glaze:

Stir together 3/4 cup powdered sugar and approx 4 Tablespoons milk.



This was absolutely delicious!  One of the best recipes I've tried in a long time.  I ate it fresh from the oven and warm.  I cannot express how yummy this was!  It will definitely be made again.
