I found this recipe at http://www.pastrychefbaking.blogspot.com/. I added a layer of melted chocolate to the top because it just didn't look sweet enough or chocolatey enough. Is that a word? Chocolatey?
It turned out pretty well, but I'm glad I added the chocolate to the top. It definitely added a new dimension to the bars. You can NEVER have too much chocolate!
Brownie Cheesecake Bars
Read the directions carefully, as the ingredients are combined in the list for both the brownie layer and the cheesecake layer.
2/3 cups plus 2 Tablespoons butter
1 1/2 cups sugar
1 1/2 cups flour
2/3 cup cocoa
1/2 cup milk
3 eggs
3 teaspoons vanilla extract
1/2 teaspoon baking powder
1 cup chopped nuts, (optional)
1 cup mini chocolate chips (optional)
1 8 oz. package cream cheese, softened
1 Tablespoon cornstarch
1 14 oz. can sweetened condensed milk
1 cup chocolate chips (optional)
Preheat oven to 350. Grease 9X13 baking pan.
Melt 2/3 cup butter. In a large mixing bowl, beat melted butter, sugar, flour, cocoa, milk, 2 eggs, 2 teaspoons vanilla, and baking powder until well blended. Stir in nuts if desired. Spread in pan.
In a small mixing bowl, beat cream cheese, remaining 2 Tablespoons butter and cornstarch until fluffy. Gradually beat in sweetened condensed milk then remaining 1 egg and 1 teaspoon vanilla and mini-chocolate chips if desired. Pour evenly over the brownie batter.
Bake 40 minutes or until top is lightly browned.
(Optional): Sprinkle 1 cup of chocolate chips on top of hot cake until melted enough to spread. Spread chocolate evenly across the top of the cake.
Cool. Chill. Cut into bars.
Share with family and friends.
Store covered in refrigerator.
I liked these brownies but I think I liked the Cookie Dough Brownies a bit more. I'm just a cookie dough kinda girl.
