I originally found this recipe at The Family Kitchen and printed it. So when I was going through my recipes-to-try folder looking for something to bake for a Church fellowship, this recipe popped out at me.
Peanut Butter Bars with Chocolate Icing
1 pkg Better Crocker Peanut Butter Cookie Mix
1 egg
2 Tablespoons butter
1 cup smooth peanut butter
Icing
1 pound powdered sugar
1 stick butter
1/2 cup cocoa powder
1 tsp vanilla
2-4 Tablespoons milk
Preheat oven to 400 degrees.
In a medium bowl, mix together the cookie mix, egg and butter. Press into the bottom of a 8X10 pan.
Bake for 15-17 minutes, just until set.
Remove from oven and drop spoonfuls of peanut butter on the hot bars. Allow peanut butter to melt slightly before carefully spreading it over the cookie base with a spatula. Cool completely.
Icing
Beat together the butter, powdered sugar, cocoa, vanilla and milk until light and fluffy.
Spread the cooled cookie bars with the icing.
Results
Oh my! This was so rich and sweet and decadent. I had a small piece right after putting the icing on. I had to grab a big glass of milk to go along with it.
Yum, yum, yum. So good. Thankfully, they were for a Church fellowship and were eatan all up before I could bring any back home!
So, good for the tastebuds, but not so good for my "food plan".
