My Thoughts:

This is the second book of the McCord Sisters series and I enjoyed getting to know the "family" again.

Elyse is very timid and shy with people she doesn't know really well.  This struck a chord with me.  When I was young, I was painfully shy.  I would hide behind my older brother and kicked men in the shins (when I was really little).

Now that I'm an adult, I've outgrown most of my shyness but still don't usually like to be the center of attention.

Elyse always told her sisters that if she was ever comfortable with a man and could talk to him freely, she would marry him.  Andrew is that man.

I enjoyed reading thier story evolve into such a sweet, understanding romance while all the drama and suspense is happening.

I can't wait to read the third book in the series, "Cowgirls Don't Cry", about the youngest sister, Kaleigh.  I've already grown to like her character and can't wait to see what happens.

It is a Beautiful Day!

What a pretty day it is!  The sun is shining and the temp is in the 50's.

The 4 yo and I just walked to the Post Office to get the mail and mail out some books.

It has been a busy, hectic beginning to the week and I'm just getting around to my Monday to-do's.

I'm off my regular blogging schedule but that is OK.  It will just help me be able to get posts ready ahead of time for next week.

So be looking for some book reviews, recipes, craftiness, and a QOTC within the next few days to a week.  I'm trying not to stress about it.

Friday is the BIG DATE NIGHT!  whoohoo.  Excited about that in case you didn't realize.

I just wanted to check in.  Now back to the grind!

P.S.  I'm ready for flip-flops!

Our lives are full of waiting.  Waiting for things in this world and the ultimate waiting for the Lord to come back to take us to Heaven to spend eternity with Him.

When we wait, do we waste our time or do we use it wisely?

While waiting for the Lord to come, we are to do good deeds, encourage our fellow Christians, comfort each other, make disciples of all nations and be ready.  Be ready so that God will call each of us "good and faithful stewards".

I've had to ask this question of myself this week:  "How do I take care of what God has given me?"  Besides the fact that my house is a wreck right now, tomorrow is cleaning day, I try to take care of our home and my family to the best of my ability.  Lately, though, I've been realizing that taking care of the body God gave me is so very important.  I fall very short there, but am trying to remedy that neglect.

With the Lord's help, I can be productive while in my Waiting Rooms and not sit idly while hiding my talents.
I've been pretty consistent this week in completing my 1st Place study in the morning.  There were a few days that I was later than usual but I stayed current and that makes such a big difference in getting the full effect of the study.

This week's reading was about God's directions for building the Tabernacle and the Instruments.  Then the actual building of the Tabernacle was described.

Some parts got repetitive.  But, the message I get from that is that they followed the commands the Lord had given Moses exactly as they had promised they would.  Exactly as described.

Do I follow the commands the Lord has given me with such dedication and precision or am I haphazard in following the Lord's commands?

I am happy to say that I stayed current on my reading this week.  Nightly, before bedtime.

Our key word for this week was "TRUTH". 

So, I'll tell you the truth.  I did not stay on schedule with my study this week.  I was on time with Chapter 10 but had to get caught up with Chapters 11 and 12 on Saturday.

Let me tell you something.  I paid the consequences.  I had more than one "Stinkin', Rotten, Horrible, No Good Day" and thought more than once "This isn't fair".  I didn't meet my exercise goal and I was very lenient on my food plan.  It all added up to a 1 pound gain instead of a loss.  If I had read those chapter on the days assigned, it would have made a big difference in my attitude and actions.

But I learned a major lesson.  Even though others may not have to watch every bite they eat and exercise every day, I do.  If I want to take care of my body, lose weight and get healthy and then even maintain that healthy weight, I have to work hard. 

Before I had kids, I knew this.  It is hereditary.  Slow metabolism and big butts and hips.  After I had kids, I guess I thought that I shouldn't have to worry so much about maintaining myself.  After-all I had had already snagged my hubby (I'll admit it), I had too much other stuff to do and because of the stress of life I deserved to treat myself.

Not true.  My body still belongs to God and I need to be a faithful steward of what He has given me.  Even if I have to work harder than others to do so.  I can push through those blah days without giving in to stressful eating. 

God is my portion and only He can fill those empty places.  He will also give me the power and the strength to succeed.

Now to reset my thinking and start this next week on the right foot.  Then the left.  Then the right.  Do you get it?  Exercise !  Corny, I know.  Maybe if it were corn on the cob....

"Pure Country 2" Movie Trailer

I haven't really had a chance to sit and watch a movie for the past 2 weeks so I don't have any new reviews.

But, for Valentine's Day, the girls and I got their daddy "Pure Country 2".  He's been wanting to see it from the first preview he saw.  He's a big fan of "Pure Country" and has watched it every time it has been on TV.

Here is a trailer.  It is a short one because I hate when the trailer gives away everything about a movie.  The other day, I stopped watching a trailer about 1 minute into it because it is a movie I want to go see and I had already saw some spoilers.  :(




Hopefully by next Saturday I'll be able to write a review on "Pure Country 2, The Gift".

Chocolate Cinnamon Swirl Coffee Cake

I found this recipe at http://www.ourchocolateshavings.blogspot.com/ .   I adjusted it a bit to lower the fat content.


Chocolate Cinnamon Swirl Coffee Cake

Crumb Topping:

3/4 cup flour
3/4 cup packed brown sugar
1/2 teaspoon salt
3/4 cup hazelnuts or wal-nuts
6 tablespoons cold butter, cut into 1" pieces (I used light butter)

Chocolate Cinnamon Swirl:

1/2 cup sugar
1 teaspoon cocoa powder
1 1/2 teaspoons cinnamon

Cake:

3 1/2 cups flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 sticks butter, softened (or 1 cup applesauce)
2 cups sugar
4 large eggs (I used only the whites)
16 ounces sour cream (I used low-fat)
1 1/2 teaspoons vanilla extract

Crumb Topping:

Put the flour, sugar and salt in a food processor and pulse to combine.  Add the nuts and pulse until they are finally copped and incorporated.  Add the butter and pulse until mixture looks like coarse sand.  Cover and refrigerate.

Chocolate Cinnamon Swirl:

Mix ingredients in a small bowl and set aside.  I put more cocoa.  You can never have too much :)

Sour Cream Cake:

Preheat the oven to 350.  Butter a 9X13 inch baking pan.

Sift together flour, baking powder, baking soda and salt together in a medium bowl.

In another mixing bowl cream butter (or use applesauce) until smooth.  Add sugar and beat until mixture is light and fluffy.  Add the eggs, one at a time.  Beating well after each addition.  Add the sour cream and vanilla.  Beat just until incorporated.

Add the dry ingredients in three additions, beating only until each addition is incorporated.  Do not overmix.

Spread 1/3 of the cake batter into the prepared pan.  Sprinkle 1/2 of the chocolate cinnamon swirl mixture over batter, covering entire surface of the batter.

Spoon 1/2 of the remaining batter over the swirl mixture and spread it evenly. 

Top with remaining swirl mixture then the remaining batter.  Spread batter evenly.

Sprinkle with the crumb topping evenly over the top of the batter.

Bake in the center of the oven for 1 hour or until a toothpick inserted in the center of the cake comes out clean.  Let the cake cool for 30 minutes.  Serves 16.


Results:

My oldest, Kaylee, walked in the door from the school bus as I was taking this out of the oven.  It smelled so good, that she wanted a piece right away and was almost begging me to cut it.  I told her it had to cool and she checked back at least 10 times before it was cool enough to give her a piece.

She LOVED it!  She had 2 pieces last evening, a piece for breakfast this morning before school and there is a piece here for her after-school snack.

I took the cake to share at Prayer Meeting/Bible Study last night.  That is where I had my first piece and it was still just a tiny bit warm.  Yummm....  Especially the nutty/buttery crumb topping.  The applesauce gave it just a tiny hint of apple flavor that in no way detracted from the cake, only added to it.

Putting the cake together was a little bit involved because I had to break out my large food processor (my small one was, too small).  I hadn't used it yet so I had some figuring out to do.  But other than that, this was definitely a great recipe and I would recommend trying it out.

Book Review: "Escape to Morning" by Susan May Warren

Book Description:

Book two in the Team Hope series by Susan May Warren, the name to watch in romantic suspense. In Escape to Morning, Homeland Security Agent Will Masterson crosses paths with Search and Rescue worker Dannette Lundeen.

Will is working undercover to find and neutralize a terrorist organization threatening U.S. security. Dannette is searching for a missing girl, who turns out to be the key to the terrorists.

As Will and Dannette put their lives on the line, they find their hearts drawn to one another. Only as they trust God and each other can they find a way to escape to morning.

My Thoughts:

I first "met" Dannette in Book One of Team Hope.  You can read my review of Flee the Night HERE.  You'll read there that I was excited to read more about the characters in this series.  I wasn't dissapointed at all!

Will Masterson was another hero to fall for even though he had to  be very secretive of his reason for being there and for doing what he did.

Dannette, "Dani" lol, was such a strong, determined heroine.  I really enjoyed her interaction with her K-9.

Learning about K-9 SAR was very interesting.  The bond between dog and handler is very strong and it is amazing how they have to read and respond to each other.

The terroristic back-plot to the romance added the intrigue and danger that made the book all the more exciting.

Great book!  I already have Book 3 of Team Hope, Expect the Sunrise, on my TBR pile and am greatly looking forward to reading it soon.

Susan May Warren has become one of my go-to authors for a great read.

Queen of the Castle ~ Week 6


Week 6 ~ Valentine's Day

A lesson to learn and not forget:  don't give a gift expecting to get something in return.  If we give, do it with no expectations attached.  And if you MUST have a gift, you better buy it for yourself!  per LBW

I admit that many holidays I set myself up for dissapointment.  I think that my husband is making great plans for me as a surprise.  No.  He's not.  If I want us to do something special, I plan it.  See my Valentine's Date post.  lol  If I want a certain present, I better spell it out plain and clear.  It took me a while to figure this out and even now I still have that little niggle in the back of my mind that maybe just maybe...

Enough of that.  Moving on.

Mother Theresa was asked:  "What can we do to help promote world peace?".  Her reply:  "Go home and love your family."  How simple, yet profound.

LBW gives a few ideas for surprising our family on Valentine's Day.  Here are a few of my favorite:

-Sneak into their rooms at night and leave a bag of treats by their beds.
-Tie a red balloon to each person's chair.
-Write a greeting to your hubby on the coffee filter.
-Make heart shaped muffins or cupcakes by placing a marble in between the cupcake paper and the pan.
-Watch you wedding video with your husband or look at wedding pictures.
-Listen (I say dance) with your husband to "your song".

Valentine's Day can be a very lonely day for some people.  So make sure you look outside your immediate family for people who could use a little lift of love.  There are so many things that you can do to make the day cheerful for someone else. 

I like to buy kids Valentine's cards and give them out.  You can't imagine the smiles it brings to faces of even the adults.  And it is still so much fun to write them out and seal them with a little sticker!

LBW stresses the fact that we, ourselves deserve a Valentine.  We are doing a very important job that is precious and priceless to our family.  God will bless our efforts in ways we can't imagine.

Valentine's Date Night



I'm really feeling some winter blah's right now and decided I need to focus on something to look forward to.

We've scheduled a date night for Valentine's "week".  There was no way it would happen on a Monday night.  If we're lucky, we'll get to sleep alone that night.  (4yo who thinks our bed is her's.)

As it happens, Doug is working daylight that week and will be home in the evenings.  This means our date can be in the evening and the girls can spend the night at G&P's (Gram & Pap's).

So Friday, February 18th, it is!

A date and an evening/night all alone.  I don't know when that happened last.

We'll be going to "The Olive Garden".  Thanks Sean and Kayla for the giftcard at Christmas!

Then we'll be going to a movie!  What?  Actually go to a theater and see a movie that we get to pick out!  All by ourselves?!?  Thanks to my brother, Dan for the specified "Date Money" he gave us for Christmas.  He knows us so well.

Oh, I'm getting all excited about looking on the internet to see what movies will be playing!  When we were dating that was a weekly tradition.  Oh, the excitement.  I can hardly contain it!

What will I wear?  Should I go get my hair done?  Maybe even my eyebrows?  I'll definitely shave my  legs.  Well, probably.  Maybe I'll even break out a new razor!!

Will Doug actually shave and clean the car out like he used to before our dates?  Without me telling him to, that is?  Oh, if only...  Be still my heart!

10 days and counting.

Anyone know of a good movie that will be playing in the theaters on the 18th?

Peanut Butter Bars with Chocolate Icing

I originally found this recipe at The Family Kitchen and printed it.  So when I was going through my recipes-to-try folder looking for something to bake for a Church fellowship, this recipe popped out at me.


Peanut Butter Bars with Chocolate Icing

1 pkg Better Crocker Peanut Butter Cookie Mix
1 egg
2 Tablespoons butter
1 cup smooth peanut butter

Icing
1 pound powdered sugar
1 stick butter
1/2 cup cocoa powder
1 tsp vanilla
2-4 Tablespoons milk

Preheat oven to 400 degrees.

In a medium bowl, mix together the cookie mix, egg and butter.  Press into the bottom of a 8X10 pan. 

Bake for 15-17 minutes, just until set.

Remove from oven and drop spoonfuls of peanut butter on the hot bars.  Allow peanut butter to melt slightly before carefully spreading it over the cookie base with a spatula.  Cool completely.

Icing

Beat together the butter, powdered sugar, cocoa, vanilla and milk until light and fluffy.

Spread the cooled cookie bars with the icing.

Results

Oh my!  This was so rich and sweet and decadent.  I had a small piece right after putting the icing on.  I had to grab a big glass of milk to go along with it. 

Yum, yum, yum.  So good.  Thankfully, they were for a Church fellowship and were eatan all up before I could bring any back home!

So, good for the tastebuds, but not so good for my "food plan".

This week's reading mainly contained Moses being sent to Egypt to lead God's people out and away from Pharoah.

This included the Burning Bush, the Plagues, the Red Sea and manna.  The plague's were very familiar.  After that, though, it was very interesting reading and I noticed a few things that I don't remember noticing before.

No matter how much we read, there will always be something to learn about or from.

Watching Wendy's vlog and reading my classmates' comments remain a highlight of my day.

Chapter 7:  I'm Not Defined by the Number
Chapter 8:  Making Peace with the Realities of My Body
Chapter 9:  But Exercise Makes Me Want to Cry

Our key word for this week was "PEACE".  As I wrote last week, the third week is usually hard for me so having "peace" this week was essential for me to be able to make it through without my anxiety taking over.
All three chapters this week really hit home for me.  I've learned not to define my success by the numbers but to look at how obedient I was throughout the week with sticking to my exercise and eating plan.

Making peace with the realities of my body has been a life-long issue with me.  I've always had low self-steem.  The study has challenged me to look at myself through different eyes.

Chapter 9 came at a great time for me.  I've felt myself slacking on the exercise front and will make a greater effort this coming week to get back on top of my plan with determination.
