Right Now I Am...

Drinking Dr. Pepper and trying to wake up!

Thinking...

About all I need to get done today.

On My Reading Pile...

Tidewater Inn (Hope Beach, #1)

I'm over half-way through and am enjoying it.  I picked it out to take to the beach this past weekend but didn't start it until after we got home.  It was too fun watching the kids play :)

On My TV...

Right now cartoons are on the TV.  But on my DVR is the FoodNetwork Star from last night.  I love those shows!

Food Network Star

What I Found While Surfing the Net...

Pepperoni & Mozzarella Stuffed Chicken Breasts
INGREDIENT1 lb. boneless, skinless chicken breasts2 oz. mozzarella cheese1.25 oz. (approx. 16 slices) pepperoni 1 large egg
1/2 cup bread crumbs (low carb use crushed pork rinds) 6 Tbs vegetable oil to taste salt and pepper
STEP 1: Trim the chicken breasts. Slice each breast in half diagonally to create two diamond-like shaped pieces. Using a small, sharp knife, cut a pocket into the side of each breast piece. This can be slightly tricky on thinner pieces so be careful. Be sure not to cut all the way through the meat but rather just into one side so that the fillings will stay in.
STEP 2: Stuff each piece of chicken with 1/2 oz. of cheese and about 4 slices of pepperoni. Lightly season each piece with salt and pepper. Set the stuffed chicken aside.
STEP 3: Preheat your oven to 350 degrees and line a baking sheet with aluminum foil. Begin to heat a large skillet with 6 Tbsp of vegetable oil over medium/high heat. Collect three shallow dishes and put the flour in one, the egg in another and the bread crumbs in the third (Pampered Chef Coating Trays would be great for this). Beat the egg until it is an even consistency (adding a 1/2 tsp of water helps break it up).
STEP 4: One by one, coat each piece of chicken in the crushed pork rinds , then the egg .. Use your hands so that you can keep the open side of the pocket pinched closed and keep the fillings in.
STEP 5: Test the oil in the skillet to see if it is hot enough by dropping a small pinch of pork rinds in. The pork rinds should sizzle and dance A LOT. It is very important that the oil is hot enough or else the breading will soak up a lot of oil and you’ll end up with some really greasy chicken!. Place all four pieces of chicken in the skillet and cook until it is golden brown and crispy on each side. This should take no more than 2-3 minutes.
STEP 6: When you remove the chicken pieces from the skillet, transfer them to the baking sheet and place it in the oven. Finish baking the chicken (to cook the inside) for about 25 minutes (longer if you have larger pieces). Remove from the oven (check to make sure the chicken is cooked through) and serve immediately!

On My To Do List...

Lots! The house is trashed from the weekend of being on the go.  I have tons of laundry to get done.  No hanging on the clothesline today due to the weather.  It will be a dryer day.  I have dishes piled up but need to get dish liquid before I can finish them.  Also on the list for today are the floors.

As for the rest of the week, I'm having a filling replaced Tuesday.  Thursday is payday, so that means writing out bills and getting groceries.  All my normal routine also will need to be done.

In the Craft Basket...

I have a turkey hat to make for an etsy order.

0-3 MonthTurkey Hat - Photo Prop - Thanksgiving

Looking Forward To This Week...

I look forward to taking the girls back to Shawnee Lake to the beach on Wednesday.  Hopefully the weather will cooperate :)

Looking Around the House...

I'm so grateful for our home and will be even more grateful when the clutter gets under control.

From the Camera...

First catch of the day.  On a Barbie pole, no less :)

On My Prayer List...

We're refinancing to consolidate some debt and I'm praying that Closing comes this week and goes smoothly.

Bible Verse, Devotional...

"Truly I tell you, whoever does not receive the kingdom of God as a little child will never enter it."  And He took the children up in His arms, laid His hands on them, and blessed them.  Mark 10: 15-16

High Five for Friday ~ 6/14/13

Five things that made me smile this week :)

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
1.  The biggest event in our house this week was my oldest daughter's birthday.  She turned 12 yesterday!  Next year I will have a teenager!  Unbelievable.  We went out for lunch and then I made her requested birthday dinner of Stuffed Shells.  She always picks ice-cream cake for her birthday cake.  We found an Oreo ice-cream cake and it was delicious.  Happy Birthday, Baby Girl!
2.  The girls and I participated in Hoosier Homemade's Summer Scavenger Hunt.  You can see more on that HERE :)
3.  Last night I started reading a book and got half-way through before I went to bed :)  This is a big deal because I have been in such a reading slump lately.  I haven't even picked up a book in a few weeks because nothing was keeping my attention.  This anthology has been great so far :)
A Bride for All Seasons
4.  We've been swimming, swimming, swimming :)  Even though the pool isn't very warm yet, that doesn't stop us.  Especially the girls!  I think they've been swimming just about every day.
5.  Saturday evening we had a bunch of people over from Church for a cook-out.  We had so much fun talking and laughing together.  And of course, the kids had a blast in the pool  :)
What made you smile this week?
Summer Scavenger Hunt Week #1
I was really excited to see that Hoosier Homemade is hosting a Summer Scavenger Hunt.  It is the perfect project for me and the girls to find the items on the list each week this summer.  I also thought it would be fun to get the girls in the picture with the item for as many as we can.  It gives Laken the perfect opportunity to aggravate Kaylee by hugging her.  (So not cool!)
When I read this week's list to the girls they pretty much knew we had this one in the bag.  We owned/had 4 out of the 5 items.  The 5th item we easily found at the Dollar Tree on a shopping excursion.
Here are our finds for Week #1:
1.  Red Car
2.  Yellow Flower
3.  Black Dog
4.  Bird Feeder
5.  Pinwheel
We had a lot of fun with the Scavenger Hunt this week.  We can't wait to find out the items for Week #2.  I somehow doubt it will be as easy as this week!
Hodgepodge ~ Daddy ~ 6/12/13
Joyce's Hodgepodgey Questions:
1. What do you think makes a good dad?
They are willing to do the dirty work (diapers, etc).  They are also available for the small things like reading a bedtime story or sitting on the couch watching cartoons with the kids.
2. What's something you learned from your own father?
My dad taught me how to play (and win) at Gin Rummy!  lol  (see #1)
3. It's your birthday-what kind of cake will we be having?
Either spice cake or chocolate cake with peanut butter icing.  yummmy!
4. When you're faced with a big decision are you more of a go with your gut type of person, or are you someone who reasons it all out, weighing the pros and cons?
Oh my!  I am a reasoner.  Maybe even an over-reasoner sometimes.
5. June is National Dairy Month. What's your favorite dairy item? Most often purchased dairy item?
My favorite dairy item would be ice-cream.  My most often purchased item would be milk.  We go through a lot of milk in our house!
6. Explorer Jacques Cousteau was born on June 11, 1910....what's something you've recently discovered or something you'd like to explore?
I would love to explore a castle.  I've always had a fascination with castles.  Maybe one day....
7. Are you typical of your generation?
This is a hard question!  I'm typical as far as marriage, kids, dogs etc.  but untypical as I'm a bit more traditional and a lot more conservative than most of my generation.
8. Insert your own random thought here.
I've missed getting hodgepodgey with you and am so glad to be back!!
Let's get hodgepodgey!
Chats on the Porch ~ 6/11/13
This week's questions are:
1. How many times a week do you have a green or veggie salad?
Never!  I hate vegetables.  lol
2. Do you pray? (You may skip this if you do not wish to answer.)
All the time throughout the day.  I do try to set aside some time specifically for quiet, uninterrupted prayer time also.
3. What season is your birthday? You do not need to give us the date.
I was born just 3 days after Spring officially came.
4. Do you have dinner guests often, every now and then or not at all? Wendell says he can be there for dinner as quick as a wink!
Not really very often unless you count my parents.  If they are here, we always invite them to stay to eat.
5. Could you describe yourself as a DIY- Do It Yourselfer?
I guess I could say I'm a DIY.  or maybe I should say "WE" are.  We can usually tackle just about any job together.  I have the book smarts and the hubby has the hands on skills.
Let's chat and get to know one another!
Book Review ~ It Happened at the Fair by Deeanne Gist
It Happened at the Fair
Join the Flock! LitFuse Publicity Group bloggerI received this book from the publisher in exchange for my honest review as part of a
Litfuse Publicity Blog Tour.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Title:  "It Happened at the Fair"
Series:  It Happened at the Fair Book 1
Author:  Deeanne Gist
Publisher:  Howard Books
Publication Date:  4/9/13
Pages:  409

Book Description:

A transporting historical novel about a promising young inventor, his struggle with loss, and the attractive teacher who changes his life, all set against the razzle-dazzle of the 1893 Chicago World’s Fair.

Gambling everything, including the family farm, Cullen McNamara travels to the 1893 Chicago World's Fair with his most recent invention. But the noise in the Fair’s Machinery Palace makes it impossible to communicate with potential buyers. In an act of desperation, he hires Della Wentworth, a teacher of the deaf, to tutor him in the art of lip-reading.

The young teacher is reluctant to participate, and Cullen has trouble keeping his mind on his lessons while intently watching her lips. Like the newly invented Ferris Wheel, he is caught in a whirl between his girl back home, his dreams as an inventor, and his unexpected attraction to his new tutor. Can he keep his feet on the ground, or will he be carried away?

My Overall Feeling of the Book:

This book was so interesting. The details about the World's Fair were amazingly written. I could picture it clearly in my mind. I loved that there were also pictures of the fair to help create the scene in my imagination.

I loved both main characters, Della and Cullen. Some of their antics and quirks were hilarious.

I was glad to read as they overcame the obstacles between them and made their way to each other.

Another great book by Ms. Gist!

A Brief Excerpt:
"Della couldn't believe the noise in Machinery Hall.  How did Cullen stand it?"

The Cover:

This cover is GORGEOUS!  But...I can't help thinking how dirty that white lacy dress would get if I were the one wearing it!

~  Gist fans should NOT miss out on this book!

Book Review ~ Roses Have Thorns by Sandra Byrd

Roses Have Thorns: A Novel of Elizabeth I (Ladies in Waiting #3)

I received this book from the author in exchange for my honest review.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Title:  "Roses Have Thorns"
Series:  Ladies in Waiting Book 3
Author:  Sandra Byrd
Publisher:  Howard Books
Publication Date:  4/9/2013
Pages:  336
Book Description:
In 1565, seventeen-year-old Elin von Snakenborg leaves Sweden on a treacherous journey to England. Her fiance has fallen in love with her sister and her dowry money has been gambled away, but ahead of her lies an adventure that will take her to the dizzying heights of Tudor power. Transformed through marriage into Helena, the Marchioness of Northampton, she becomes the highest-ranking woman in Elizabeth’s circle. But in a court that is surrounded by Catholic enemies who plot the queen’s downfall, Helena is forced to choose between an unyielding monarch and the husband she’s not sure she can trust—a choice that will provoke catastrophic consequences.
My Overall Feeling of the Book:
This book was very well written and paid close attention to period details. It was very interesting to read about society and relationships during the reign of Queen Elizabeth.
At the same time, huge chunks of time are skipped over from chapter to chapter. This book isn't so much about Elin and one particular time in her life. It is more about the happenings to her in the lifetime Queen Elizabeth.
I'm not sure how I felt about this. In one way, I almost couldn't read fast enough because I wanted to find out what was going to be written about next. But on the other hand, so many people flew in and out of Elin's, or should I say Helena's, life that it had to be read in a manner to keep them straight.
Overall, this was a very good read. I didn't read the first two books of the series, but this book can stand alone very well.
A Brief Excerpt:
"Just before and after Christmas the court was at its most festive.  It was the season of revels, and plays were performed for Her Majesty's enjoyment."
 Page 82
The Cover:
The cover is rich in color and period clothing.  It does a very good job of showing what the book is about.
It's Monday! What Am I Reading? ~ 5/6/13
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

The book I am currently reading is:

Follow the Heart

Kate Dearing’s life is turned upside down when her father loses everything in a railroad land speculation and she and her brother are shipped off to their mother’s brother, Sir Anthony, in England with one edict: marry money.

Though their uncle tries to ensure Kate finds matrimonial prospects only among the highest echelon of British society, her attentions stray to the one of the least eligible people at her uncle’s home—the garden designer.

Trying to push her feelings for the handsome—but not wealthy—man aside, Kate’s prospects brighten when a friend of Sir Anthony’s, a wealthy viscount, shows favorable interest in her. But will marrying for the financial security of her family be the right thing to do, when her heart is telling her she’s making a mistake?

So far, I've only read the prologue, but it looks very promising!

Also Hoping to Read This Week:
