Peanut Butter Rice Crispy Bites

The girls and I made these bite sized Rice Cripy treats for game night at Church on New Year's Eve.  Instead of pressing them in a large pan, we decided to press them into mini muffin papers.  They were the perfect size for mouth popping!

Peanut Butter Rice Crispy Bites

1/4 cup Butter
40 mini marshmallows or 10 oz large marshmallows
6 cups Rice Crispy cereal
3/4 cup Peanut Butter

1 cup chocolate chips
2 Tablespoons butter
3 Tablepsoons milk

Melt butter in a large saucepan over low heat.  Add peanut butter.  Sitr until well blended.

Add marshmallows and stir contantly until marshmallows are well melted and mixture is well-blended.

Heat and stir 2-3 minutes longer.  Remove from heat and stir in cereal.

Line a mini muffin tin with mini muffin papers.  Press a teaspoon of cereal mixture into each paper.

Moisten fingers with water and press mixture into the muffin paper.

In a bowl, combine chocolate chips, butter and milk.  Microwave in 30 second increments until well blended.  You may have to add more milk to get the mixture to a drizzling consistancy.

Drizzle each bite with chocolate mixture.

Makes about 4 dozen bites.

The girls had a lot of fun filling the cups and pressing the cereal down.  Let the kids help out.  They'll love it!
