Tuesday at the Table ~ Vanilla Chai Tea Bread

This bread smells seriously delicious while baking.  Your family will come from every direction to ask what is in the oven, so beware.

I doubled the recipe when I made it so we could have a loaf to sample at home and then took the other loaf to a Church dinner.  The following recipe is for one loaf only.

You can use the black tea of your choice but the Vanilla Chai was wonderul!


Vanilla Chai Tea Bread
adapted from The Jey of Cooking

1/2 cup butter
3/4 cup sugar
2 eggs
1 Tablespoon vanilla
1/2 cup prepared Vanilla Chai Tea, cooled
1/3 cup milk
1/4 tsp cardamom
1/2 tsp cinnamon
1/8 tsp cloves
3/4 tsp nutmeg
2 tsp baking powder
1/2 tsp salt
2 cups flour

Glaze:
1 cup powdered sugar
1/4 tsp vanilla
3-6 tsp prepared Vanilla Chai Tea, cooled
additional cinnamon

Heat oven to 350 and spray the bottom of a loaf pan with cooking spray.

In a mixing bowl, cream together butter and sugar.

Beat in eggs, tea, milk, vanilla and spices on low speed until well combined.

Add in the baking powder, salt and flour.  Stir just until moistened.

Pour into prepared pan.

Bake for 50 minutes.


Cool 10 minutes.


Remove from the pan and cool on wire rack for 30 minutes..


Meanwhile, whisk together powdered sugar, vanilla and 3 tsp of tea.  Add more tea until the glaze is a completely spreadable consistency.



Spread glaze over bread and sprinkle with cinnamon.


The direction said to cool the bread completely before slicing, but around here we like fresh out of the oven bread and there was no delaying my kids from giving it a try.

It didn't really need it, but spread a little butter on the bread so that it melts and....yum, yum, yum.
