Chocolate Chip Cake with Cookie Dough Buttercream Icing

This cake was amazing!  The icing...oh baby!  Just like cookie dough.

I made it to take for our Church's Mother's Day Dinner.  There were lots of other cakes there but there was not a single crumb left in my cake pan by the time it was over.

I got this recipe from http://www.galexiecupcakes.blogspot.com/ but wasn't in the mood to made cupcakes so I just made it in a cake pan.

My uncle and cousin were fighting over the piece with the most baby chocolate chips.  I think they each had a couple pieces!

Chocolate Chip Cake

3 sticks butter at room temperature
1 1/2 cups brown sugar, packed
4 large eggs
2 2/3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
2 teaspoons vanilla extract
1 cup chocolate chips

Preheat oven to 350.  Spray cake pan.

In a mixing bowl combine butter and brown sugar until light and fluffy.  Mix in the eggs one at a time, beating well after each egg is added.

Add flour, baking powder, baking soda and salt.  Mix well.  Add vanilla and fold in the chocolate chips with a spatula.

Spread evenly in cake pan and bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cool completely.

Cookie Dough Buttercream Icing

3 sticks butter, at room temperature
3/4 brown sugar, packed
3 1/2 cups confectioners sugar
1 cup all-purpose flour
3/4 teaspoon salt
3 Tablespoons milk
2 1/2 teaspoons vanilla extract
Mini Chocolate chips or mini chocolate chip cookies

Beat together the butter and brown sugar until creamy.

Add confectioners sugar and beat until smooth.

Beat in the flour and salt.

Mix in the milk and vanilla extract until smooth and well blended.

Spread the icing on the cooled cake and then sprinkle the mini-chocolate chips or cookies on top.

Share with friends and family!

Let me know if you try this and what you think.  I think it was delicious.  6 sticks of butter...how could it not be?

  5. So, I made this last night- the cake was amazingly delicious! Soft, moist, and chocolate perfection! However, when I made the icing, you could still feel the sugar in the icing. I'm thinking I didn't cream the sugar and butter long enough. Any suggestions?

  6. JMF- that could be the reason. I don't recall having that problem with the icing. I creamed the sugar and butter pretty well, though.
