Red Velvet Brownies with White Chocolate Icing

I found this recipe over at "How Sweet It Is" just a few weeks ago and it shoved a bunch of new recipes to try out of line and went to the top of the pile.

The original recipe made a 8X8 cake pan but I needed more than that to take to a fellowship at Church, so I double the recipe.  If you'd like a smaller batch, the link above.  I actually didn't have enough red food coloring but what I had gave them enough color, I thought.

This was a new recipe so my mom and I had to taste test them before taking them out in public.  Absolutely delicious!  Especially the combination of the brownie with the white chocolate icing!


Red Velvet Brownies

1 cup butter, room temperature
3 cups sugar
4 eggs
4 teaspoons vanilla extract
2 1/2 cups all purpose flour
1/2 teaspoon salt
6 Tablespoon cocoa powder
4 Tablespoons red food coloring
1 1/3 cups chocoate chips (optional, yeah right!)

Preheat oven to 350.  Grease a 13X9 cake pan.

In a small bowl, combine cocoa powder, red food coloring and 2 teaspoons vanilla to create a paste.

In a mixing bowl, cream butter and sugar until fluffy.  Add eggs one at a time, then add remain  2 teaspoons of vanilla.

With the mixer on medium speed, add in cocoa powder misture.  Beat until batter is completely red.  (if you batter is not red, you can add a little more food coloring).

Add flour and salt and mix until just combined.  Fold in chocolate chips.

Spread in 13X9 pan.  Bake for approx 40-45 minutes or until a toothpick inserted in center comes out clean.

Cool completely.

White Chocolate Icing

2 sticks butter, room temperature
5 cups powdered sugar
2 teaspoons vanilla
8 ounces white chocolate, melted
2-4 Tablespoons milk (more if needed)

Cream butter until fluffy and add vanilla.

Slowly add powdered sugar with the mixer on low speed.

Add in melted white chocolate and beat until incorporated.

Add milk 1 Tablespoon at a time until you reach a desired consistency.

Spread icing on brownies, cut and enjoy!

  11. I just found your blog and am your newest follower. I never tried to make cake on this way. Creams and butter is I and my family always dislike to eat. But your work is wonderful, seems too yummy.
