Apple Pecan Upside Down Cake

In my opinion, you can't go wrong with apples, cinnamon, brown sugar and pecans.  Yum!

So when I saw this recipe at http://www.karensquilting.com/ I printed it off to use up some apples that I had in the refrigerator.

I took it to Prayer Meeting/Bible Study last Wednesday and everyone really liked it.  It was still warm and gooey and was absolutely delicious.  Especially, the topping.  Or would that be the bottom?


Apple Upside Down Cake

1/2 cup chopped pecans
2 large Granny Smith apples peeled and sliced
2 teaspoons vanilla extract
2/4 teaspoon ground cinnamon
1/2 cup butter
1 cup packed brown sugar

Cake:
3/4 cup sugar
2 eggs
3/4 cups milk
1/2 cup sour cream
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 375 degrees.

Slice the apples and toss with vanilla and cinnamon.

Melt the butter in a microwave safe move and pour into the bottom of a 9X9 baking dish.  Sprinkle brown sugar and chopped pecans on top of the melted butter.  Spread the apple mixture over the top of the brown sugar and pecans.

Cake:

Beat the eggs and the sugar until creamy.  Add all of the rest of the ingredients and mix well.  Pour over the apple slices and spread evenly.

Bake for 45 minutes and check for doneness.

Let the cake cool for 10 minutes, then loosen the sides with a knife.  Invert cake onto a cake plate or platter.  If any of the brown sugar mixture is left in the baking dish, scrape it off and spread over the top of the cake.

Share with family and friends.
